A light touch in the cellar makes for rosé touched by light. Start with a gentle press, brief skin contact, & slow ferment. Stainless steel preserves natural acidity, while a bit of neutral French oak rounds out the mid-palate.
On the Table
Crisp, cool, clear... pairs well with an afternoon breeze. Delicate enough for a picnic blanket: charcuterie, soft cheese, & roasted peppers. Complex enough for a table cloth: ginger pork, garlic chicken, & oysters à la mignonette.
